reds. Made with the careful approach that Moss Brothers have
to all their wines Moses Rock Cabernet Shiraz beautifully blends
these two important varieties.
Moses
Rock lies on the coast 5km west of Moss Brothers. Long time
local residents claim Moses was a black stallion (circa 1920) who,
with a small group of mares, roamed the bushland along the coast
and in particular the area adjacent to the granite outcrop known as
Moses Rock.
2006

Spring
was mild and relatively free from the usual storms that buffet the
Margaret River Region. From the out set temperatures were down on
average. This resulted in some varieties especially Merlot, setting
a quite poor crop.
Rainfall
through the growing season was regular and as summer approached
above average with temperatures continuing well below the
norm.
Veraison
reflected the cool season occurring up to three weeks late - as an
example with Semillon veraison occurred towards the end of January
rather than at the beginning of the month with the eventual
ripening and harvest correspondingly late.
All
varieties followed this pattern and were further slowed down by
persistent rain events to the extent that reds in many instances
failed to reach the exacting standards of quality and maturity
required by the wine maker’s. White wines are more refined yet with
excellent fruit definition and intense bouquet. Reds are more
elegant, subtle with excellent tannin and colour.
Wine
Makers Notes
One-year-old
French oak was used for the Cabernet and mostly 1-year-old American
oak and 2 year old French oak in the proportion of the Shiraz. This
wine was meticulously blended to produce a uniquely Australian
style red with great fruit characters. A touch of Merlot and
Cabernet Franc was added to soften and round out the
palate.
The
batches were fermented at temperature in mid 20 degrees to maintain
the fresh primary fruit characters for the Moses Rock
style.
The
wine was matured for 14 months in oak before blending and then left
for another 4 months in oak prior to fining and
bottling.

Notes
Colour:
Violet
Bouquet: Juicy ripe blackberry, cherry and spice aromas of
Shiraz mixed with mushrooms and violets of the cabernet
sauvignon. Oak provides the toasty smoky notes to extend the
complexity.
Palate:
The palate has generous cherry and spice running through mid palate
with soft finish, a well-structured wine with toasty oak providing
for powdery tannins.
